Bubble and Squeak Filled Pittas

Bubble and Squeak Filled Pittas
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients

  • 10 Mission Plain Pittas
  • 625g [20oz] cold roast potatoes, crushed
  • 400g [13¾ oz] cooked sprouts, crushed
  • 250g [8¾ oz] red onions, cooked and cut in chunks
  • 375g [13¾ oz] cooked carrots, cubed
  • 2.5 large eggs, beaten 10 tbsp olive oil
  • salt / pepper
  • brown sauce

Method

  1. Slice open pittas. Heat olive oil in a large non-stick frying pan. Mix all vegetables together and season. Add egg and combine. Spoon into hot oil and cook gently for 10 minutes.
  2. Turn and then slide back into the frying pan.
  3. Cook for further 10 minutes until golden brown Serve in pittas with some fruity brown sauce.
