Cajun Chicken Quesadilla with Sweet Red Pepper and Sweetcorn

Serves 8
Preparation time: 5 minutes
Cooking time: 15 minutes


  • 4 Mission Super Soft Plain wraps
  • 400g chicken breast, cubed
  • 2 tbsp Cajun seasoning
  • 2 tbsp vegetable oil
  • 2 red peppers, sliced
  • 400g Sweetcorn


  1. Mix chicken with Cajun seasoning. Heat oil in pan and fry chicken for 5 - 6 minutes or until cooked through, adding red pepper for the last 2 minutes to soften.
  2. Place one tortilla on a baking sheet. Spoon on half the chicken, sweetcorn and red pepper, place a second tortilla on top and press down gently. Repeat for second tortilla on another baking sheet.
  3. Bake in a pre-heated oven at 200°C/gas mark 6 for 5 – 6 minutes or until golden brown and filling is piping hot.
  4. To serve as a snack, cut the tortilla into quarters.
