Cheesey Potato and Pea Naan Frittata

Cheesey Potato and Pea Naan Frittata

Ingredients

  • 2 x 185g [6 ½ oz] Mission Plain Naan Bread, cut into 2cm [3/4 in] cubes
  • 5 large eggs, beaten
  • 333.5g [11 ¾ oz] cooked potatoes, cubed
  • 1 large onion, finely chopped
  • 100g [2 ¼ oz] cooked peas
  • 50g [3 ¾ oz] Cheddar cheese, grated
  • 3. 5 tbsp olive oil
  • salt / pepper

Method

  1. Preheat oven to 200°C/400°F/Gas 6 or grill. Mix together naan, peas, potatoes, onions and cheese and season well. Add egg to mixture, mix well.
  2. Heat oil in a non-stick frying pan. Spoon mixture into hot oil.
  3. Cook for 2-3 minutes, then either put into preheated oven or grill for 10 minutes.
  4. Allow to cool and chill well.
  5. Cut into wedges and serve.
