Mediterranean Pockets

  • 10 Mission Plain Super Softi Wraps
  • 5 orange sweet potatoes, peeled, sliced 5mm thick
  • 2.5 red peppers, deseeded and cubed
  • 10 tbsp balsamic vinegar
  • 2.5 yellow pepper, deseeded and cubed
  • 20 tbsp olive oil
  • 2.5 orange peppers, deseeded and cubed
  • 1 jar sun-dried tomato pesto
  • 5 white onions, sliced
  • 5 bags of rocket leaves
  • 5 cloves of garlic, crushed
  • 500g feta cheese
  • salt and pepper


  1. Place peppers and onions on baking tray and sprinkle with crushed garlic, salt and pepper and 2 tbsp of olive oil.
  2. On another baking tray layer the sweet potato and sprinkle with balsamic and olive oil.
  3. Place both in oven at 200ºC for 20 minutes or until potato is soft.
  4. Heat wraps on low setting in microwave for 20 seconds.
  5. Spread wraps with thin layer of tomato pesto, then place rocket in middle, top with peppers, onions and sweet potato, and sprinkle with feta.
  6. Fold in the bottom of the wraps, then the two sides to form a pocket with filling peeking out the top.
  7. Serve and enjoy.
