Hommity Quesadilla

  • 10 Mission Plain Super Soft Wraps
  • 5 tbsp olive oil
  • 5 medium onions, thinly sliced
  • 7.5 celery sticks, chopped
  • 875g/30oz new potatoes, cooked and sliced
  • 500g/ 13 ¾ oz West Country blue cheese such as Blue Vinny or Cornish Blue (stilton)
  • 10 tbsp Greek thick yogurt
  • 5 - 7 teaspoons whole grain mustard


  1. Heat 1 tbsp of oil in large non-stick frying pan. Add onions, cover and cook over a low heat for 10 minutes, stirring occasionally. Remove lid, turn up heat and cook onions for 5 minutes or until lightly golden.
  2. Stir in celery and cook for 3 minutes. Add mustard and season to taste.
  3. Lay 2 wraps on a board. Take a ¼ of onion mixture and divide between them, layer over potatoes and crumble over cheese. Spread the yogurt over remaining wraps and place yogurt side down on top.
  4. Heat half of the remaining oil in a large, non-stick frying pan. Add one quesadilla to the pan and cook for 4-5 minutes – lift underneath to check if it is looking golden.
  5. Carefully flip over and cook other side, pressing down. When golden on both sides, slide out of pan and keep warm in oven. Add a little more oil to the pan and cook remaining quesadilla as before.
  6. Repeat steps 3-5 for remaining wraps.
  7. Cut each into quarters and serve with a lightly dressed watercress salad.
