Smoked Salmon Potato Salad & Sweet Mustard Crème Fraiche Pittas

Cooking time: 20 minutes

Ingredients

  • 5 Mission Plain Pitta
  • 500g [17½ oz] smoked salmon, sliced
  • 1kg [35oz] cooked potatoes, cubed
  • 100g [3¾ oz] rocket leaves
  • 10 tbsp olive oil
  • salt / pepper
  • 500g [17½ oz] crème fraiche
  • 5 tbsp dill, chopped
  • 2.5 tbsp wholegrain mustard
  • 5 tsp sugar

Method

  1. Slice open the pittas lengthways.
  2. Mix together potatoes, olive oil and rocket and season.
  3. Place on the open pittas and cover with smoked salmon.
  4. Mix together crème fraiche, dill, mustard and sugar, spoon over the smoked salmon and serve.
