Spicy Lamb Kofta & Spinach Wrap with Honey Yogurt

Spicy Lamb Kofta & Spinach Wrap with Honey Yogurt
Preparation time: 25 minutes
Cooking time: 20 minutes


  • 4 Mission Plain Super Soft Wraps
  • 1.25kg (1lb) lamb mince, not too lean
  • 2 medium egg whites
  • 6 tbsp fresh mint, chopped
  • fresh spinach
  • 2 tbsp dried oregano
  • 2 tsp ground nutmeg
  • 2 pinches chilli powder, optional
  • 2 heaped tsp garlic granules
  • 6-8 tbsp dried breadcrumbs
  • salt / pepper
  • drizzle of olive oil
  • 416g (9oz) natural yoghurt
  • 6 tbsp runny honey
  • 6 heaped tbsp fresh mint, chopped


  1. Pre heat oven to 220°C gas 7.
  2. In bowl, place lamb mince, egg white, mint, chilli, oregano, nutmeg, garlic and breadcrumbs. Mix well, so you end up with a paste.
  3. Add salt and pepper, then form into 22 thin cylinders, roughly 10cm x 2cm.
  4. Place in non-stick baking tray, and drizzle with a little olive oil.
  5. Cook for 15 minutes, until lightly browned, turning occasionally.
  6. Meanwhile, lay out wraps, place on a few baby spinach leaves, top with 2 Koftas and a good spoon of honey and mint yoghurt.
  7. Wrap, leaving one end open.
