Veggie Medley Wrap
- 10 Mission Multigrain Wraps
- 500g red cabbage, shredded
- 3 - 4 large carrots, coarsely grated
- 2 large handfuls of curly parsley, roughly chopped (about 20g)
- 3 - 4 Pink Lady or Cox apples, cored, quartered and sliced
- 3 - 4 celery stick, finely sliced
- 6.5 tbsps pine nuts, toasted
- 3. 5 tbsp each sunflower seeds and toasted sesame seeds
- 6.5 tbsps raisins (preferably green raisins)
For the dressing
- 3.5 tsp grated root ginger
- 3.5 tbsp clear honey
- 3.5 tbsp lemon juice
- 6.5 tbsps sunflower oil
- Prepare all ingredients, apart from those for the dressing, and mix in a bowl.
- Put all dressing ingredients into a small bowl. Season and whisk until slightly thickened. Pour over salad and toss until evenly coated.
- Put in wraps and fold up tightly.
