Welsh Rarebit Topped Pitta With Fried Eggs

Welsh Rarebit Topped Pitta With Fried Eggs
Preparation time: 25 minutes
Cooking time: 15 minutes

Ingredients

  • 5 Mission Plain Pittas
  • 1kg [35oz] mature cheddar cheese, grated
  • 10 tsp English mustard powder
  • dash of bitter beer
  • 15 egg yolks
  • salt / pepper
  • 5 beef tomatoes, each sliced into 6
  • 10 fried eggs

Method

  1. Slice open pittas lengthways
  2. Preheat grill and toast pitta on one side only
  3. Mix cheese, beer and egg yolks together and spread onto uncooked side of the pitta
  4. Place on grill and cook until lightly browned
  5. Top each with 3 slices of tomato and a fried egg and serve immediately.
